Easy cook – Zucchini Mushroom Salad with Lemon Vinaigrette

Hello Everyone.

I’ve been really engage on Pinterest lately, and my favourite topic to pin is for sure food, everyday I discover new recipes to variate my dishes for lunch and dinner. Today I pin this Zucchini and corn salad that I got so obsessed to do that even I didn’t had all the ingredients, I worked with some substitutes that I had available and voila.

I never did any recipes here or anything food related, let me know if you guys like it so I can do more in the future, also This is an adaptation of a recipe that i saw on Pinterest and I think was well succeed.

Time of preparation: 10 minutes

Serve: 2 people

The Salad

  • 2 Zucchinis sliced.

  • 1/2 cup of chickpea

  • 1/2 cup of sliced Mushroom

  • salt and peper

  • nuts optional

Now, the only thing that I cooked was the mushroom to make it softer. In a bit bowl, I pt all the dry ingredients to mix it up and after is just get a plate or a small bowl and place first the zucchini slices and the rest on center. Now to the dressing.

Lime Vinaigrette

  • ½ cup good olive oil

  • 3 tablespoons fresh lime juice

  • 1 teaspoon Dijon mustard

  • 1 clove minced fresh garlic

  • Kosher salt and freshly ground black pepper to taste

A good option is to mix all the ingredients in a jar to shake it before serve and also if you have dressing left to storage to use in other salads but because I didn’t have in hand, I mix it on a bowl.

After it ready, is just put in your salad with some salt and nut optional ( you can use cheese too) and enjoy it, it’s satisfy a lot and is really delicious. You can serve with a meat or chicken too if just the salad were not enough. Here you can access the original recipe.
